Matzah is available for Passover Preorder!
Hello!
Happy Spring! This week we are excited to open online preorders for our 1503 Matzah. We are honored to continue this very special annual Passover tradition, and hope you’ll join us in celebrating its history.
Many of you are familiar with the story of our Matzah. For those who aren’t, this centuries-old recipe stems from the era of the Spanish Inquisition, when any religious activity outside of the Church had to be reported. In the year 1593, a woman in the north named Angelina de Leon secretly made Matzah, which had been outlawed along with Judaism. Her maid saw her and testified against her in court, exposing her as a secret Jew, but the court documents contained Angelina’s ancient recipe. You can read more about our Matzah here in Portland Monthly.
This Matzah recipe uses flour, fruity olive oil, eggs, a bit of wildflower honey, and black pepper. It's baked thin, crisp, and a little dark for nice, crunchy edges. It’s truly unique – and delicious!
Since Matzah production requires a longer lead time for planning, we are opening online pre-orders now, and running through March 29th at 9 am! All Matzah orders will be available for pickup on Wednesday April 1st between 8am - 1pm, so please make sure to designate your pickup date when you check out.

Although Passover begins on the 1st, our Matzah will remain shelf-stable through the holiday and beyond. Matzah is one of our fastest selling items of the year, so be sure to reserve your half-pound box as soon as you can.
Note: this recipe is not Kosher for Passover,
Best,
