Happy Passover!

We're honored and excited to be making matzah for the 8th year in a row! This centuries old recipe stems from the era of the Spanish Inquisition, when Catholic Spaniards were encouraged to report any religious activity outside of the Church. A woman in Northern Spain named Angelina de Leon secretly made matzah, which had been outlawed with Judaism. Her maid saw her and testified against her in court, exposing her as a secret Jew.
