Summer Fruit Pie + the Kouign returns
Hope you all had a relaxing long weekend spent unwinding with loved ones and enjoying the lovely weather. We had a great time making four different summer pies for the Fourth of July, and are happy to say that our Summer Fruit Pie with Ginger Oat Streusel and Summer Fruit Hand Pie remain on the menu for your continued enjoyment this weekend. The filling has peaches, rhubarb, and berries tossed in homemade strawberry jam – a taste of summer in every bite!

It feels as if the first day of Spring was only yesterday, yet somehow we are already heading into the unofficial beginning of summer: Memorial Day Weekend. I am hoping for weather like we had this past weekend so I can spend plenty of time outdoors with friends and family. But even if the rain persists, I’m still planning on having a Memorial Day BBQ to kick off summer regardless!

Spring has arrived, and so have more seasonal items here at Bakeshop! A couple of weeks ago rhubarb became available again, which is always one of the first hints of spring produce after a long winter. We’ve been offering our Raspberry Rhubarb Pie with Ginger Oat Streusel ever since, and this week we are thrilled to bring back our Rhubarb Hand Pie. We love the tart rhubarb tossed in house-made rhubarb jam paired with our flaky old-fashioned pie dough, as well as the hint of pink syrupy goodness that drips through the crust of the hand pies while they bake.

Raspberry Rhubarb Pie, Chocolate Espresso Cake, and Pain aux Raisin
Hope you’re all moving into daylight savings with ease, and are ready for the fast approaching first day of spring on Sunday. To celebrate the return of spring flavors (as well as Pi Day yesterday), we have added a Raspberry Rhubarb Pie with Ginger Oat Streusel to this weekend’s menu. Though strawberry rhubarb is a popular combination, I personally think raspberry and rhubarb is even better! The combination of rhubarb and raspberry tartness softened by the sweetness of the streusel keeps the pie from becoming cloyingly sweet. Give it a try and let me know if you agree!
Hamantashen for Ukraine
This week we are honored to participate in Hamantashen for Ukraine. For this special fundraiser, bakers from around the world are coming together and baking Hamantashen to raise money for the Polish Humanitarian Action, an organization that is assisting Ukrainian refugees at the Polish border.
How a pastry comes to be
The bright burst of sunshine was just enough to nudge my thinking towards spring. Even if it was a short lived tease before the onslaught of rain. In that small window, dreams of lighter flavors tempted me and hopes of the first stalks of rhubarb filled my mind. A quick call confirmed that a box was secured and the next day slender ruby red stalks arrived. The fruit was cut into long planks, the handiwork of a talented baker, then submerged under a bath of subtle flavors - hibiscus, raspberry and cherry - to balance the fruit’s natural tartness.
